t's our favorite day of the week, Taco Thursday Our Chef Eleazar is busy making delicious salsas, because what's a taco without salsa? This one is a pumpkin seed sauce (Salsa de Zikilpak), its a kind of marriage of cultures as its based in a traditional Zikilpak sauce with green tomatoes, onions and pumpkin seeds all roasted over wood fires, but as our Chef likes to bring different regions specialities to his dishes he's including some insects as is typical in Central Mex...ico - got to get that protein in you and honestly it tastes delicious.
