Want to know what to do with leftover Mashed Potatoes? This recipe is perfect for you! These tasty treats are easy, delicious and great for game days or any other occasion. Give them a try and let me know how they turned out. Deep Fried Loaded Mash Potato Balls Recipe... For the balls: 4 cups leftover mashed potato (cold) 1 cup Sharp Cheddar cheese (shredded) 1 cup Pepper Jack Cheese (shredded) 1 cup Green Onions (chopped) 1 cup Bacon (about 6-8 slices, cooked, diced) 3 Garlic Cloves (minced) Tsp Black Pepper Tsp Salt Oil (for frying) For the Breading: 1 cup All Purpose Flour (or as needed) 4-5 Eggs 1 cup Italian Bread Crumbs Salt and pepper to taste 3 containers Garnish (optional): Parsley Parmesan cheese For Breading: In the first container mix flour and season with salt and pepper. Set aside. In the second different container, crack and beat 4-5 eggs (or as needed). Set aside. In the third container add Italian bread crumbs. Set aside. Steps: In a large mixing bowl, add leftover mash potatoes, green onion, bacon, cheddar, pepper jack, garlic, black pepper and salt. Mix all ingredients thoroughly. Form loaded potato balls (form to whatever size you desire, I suggest making them small and bite size), set aside on a baking tray or cutting board. Bread each of the potato balls by placing in the flour and covering entirely, shake off excess flour. Place into the egg wash and make sure to coat the entire ball. Place into bread crumbs and roll around to cover the whole surface of the balls. Repeat for all of your potato balls. In deep fryer/cast iron/deep pot heat oil to 350 f Place potato balls into the oil gently, so as not to smash or crush them. Make sure to be safe and NOT drop them into oil as this could cause serious burns. *If using a cast iron pan like in my video, make sure you are using a wooden spoon to pour hot oil onto balls as you're turning them to cook evenly. Serve garnished with minced fresh parsley, parmesan cheese and a side of sour cream. Enjoy!
