My name is Massimo Vitali and I am originally from Milano, Italy. My father was a chef and my mother a cook but I acquaried the taste for traditional recipes from my grandmother's trattoria. My curiosity to know how others live different cultures, realities and flavors has taken me to different countries. A healthy and balanced diet is a foundation in my kitchen: certain amounts of fats and limited carbohydrates, plus a heavy quantity of vegetables and micronutrients. For the last decade I found a home in the paradise of Isla Cozumel where I am currently executive chef at the Westin Cozumel hotel; since its opening in 2017 I continue with my mission to fall in love with the world of cooking.
