This week, thanks to a link sent by a friend and previous guest, we at CB Mexico City were pleasantly surprised to open the New York Times website and see a familiar face beaming at me. It was Dirk Kinet, the designer and resident of the house in Centro Historic where we spent an unforgettable evening together eating delicious snacks and learning about mezcal as we sipped at a variety of bottles.

Sopes are antojitos (bites) made of corn. It could have different dimensions. These are standard tortilla size. Right after cooked on comal must be pinched on the edge and in the middle so it can hold ingredients. Ingredients can be just sauce. Tipically are served with a refried beans layer, onions, lettuce and your favorite sauce smashed in molcajete. Today México celebrates Independence Day! ¡Viva México!

At Taquería Ron Lauro you will find the classic ones. But for adventurers and foodies they serve machitos and marrow tacos, considered a supreme delicacy.
